Spiced Peach Cocktail

I know it’s only Tuesday, but thats the kind of week I’m having. I played around in the kitchen and came up with  my new favorite drink…at least until Friday.

3 ripe peaches cut into slices

1 hunk of ginger, peeled. The piece I used was about 2 1/2 inches.

4-5 mint leaves

equal parts sugar and water.

Good quality gin

Ginger beer

Directions: in a medium sauce pan pour in equals parts water and sugar bring to a boil. Add peaches, ginger and mint let simmer until it becomes the consitancy of  a light syrup. Allow to cool completely. Remove peaches, ginger and mint.  In a shaker filled with ice pour 1 ounce of gin, 1 1/1 ounces of syrup and shake. Pour into a small glass with ice and top with ginger beer. Yum.
